Curry Potatoes

This dish is great to eat as-is or as a side dish. Whichever you choose, it doesn't take long to make and as always, is super 'clean' and healthy! This dish took under 3o minutes to make, and I whipped up together something quick from what I had left in my fridge.




Ingredients


  • White potatoes

  • Yellow curry spice

  • Green cabbage

  • Green peas

  • White onions

  • Carrots

  • Acorn squash

  • Yellow peppers

  • Extra-virgin olive oil



Directions


  1. Peel potatoes and squash and chop up along with the rest of the ingredients.

  2. Drizzle olive oil in a pan and saute the onions until they become translucent.

  3. Add in your organic yellow curry (MSG free) spice

  4. Add in your potatoes and squash and cook until half-way tender.

  5. Add in your cabbage, carrots,and peas.

  6. When all is tender, turn off the stove and let cool for a couple of minutes to get all the flavour!
