Navy Bean Veggie Soup

I made this soup this morning on a whim and my whole family enjoyed it! It's a great soup to eat when you and your loved ones are feeling under the weather. Giving your body a break from animal fats in order to speed up the healing process, this recipe is for you! The vegetables, herbs, spices and protein in the beans makes this dish a complete meal.




Ingredients


  • Navy Beans

  • Broccoli

  • Celery

  • White onions

  • Carrots

  • Extra-virgin olive oil

  • Tomato sauce

  • Oregano

  • Garlic powder

  • Onion powder

  • Sea salt

  • Water




Directions


  1. Soak your dried navy beans overnight in water in the fridge

  2. The next day, cover the beans with water in a pot and boil beans for an hour.

  3. ( You can also use beans from a can to make it easier)

  4. Cut up your celery, onions, and carrots and place in another pot.

  5. Drizzle your olive oil on top and cook on low for 1-2 minutes.

  6. Then add your navy beans, tomato sauce, and water and cook and bring to a boil.

  7. Reduce heat to medium-low for another 10 minutes and add your broccoli in.





               Et voila! Ready to Enjoy. Buon Appetito!
