Navy Bean Veggie Soup

I made this soup this morning on a whim and my whole family enjoyed it! It's a great soup to eat when you and your loved ones are feeling under the weather. Giving your body a break from animal fats in order to speed up the healing process, this recipe is for you! The vegetables, herbs, spices and protein in the beans makes this dish a complete meal.

Ingredients
Navy Beans
Broccoli
Celery
White onions
Carrots
Extra-virgin olive oil
Tomato sauce
Oregano
Garlic powder
Onion powder
Sea salt
Water
Directions
Soak your dried navy beans overnight in water in the fridge
The next day, cover the beans with water in a pot and boil beans for an hour.
( You can also use beans from a can to make it easier)
Cut up your celery, onions, and carrots and place in another pot.
Drizzle your olive oil on top and cook on low for 1-2 minutes.
Then add your navy beans, tomato sauce, and water and cook and bring to a boil.
Reduce heat to medium-low for another 10 minutes and add your broccoli in.
Et voila! Ready to Enjoy. Buon Appetito!
