Yellow Split Pea Soup

Even though I long for the warm summer days, early autumn is a lovely season and ideal for preparing a range of hearty and tasty soups! I spontaneously created this soup for my family yesterday, and everyone wanted more! This soup is packed with nutrients to help keep your immune system strong against the viruses that are beginning to go around...





Ingredients


  • Celery

  • Carrots

  • White onions

  • Yellow split peas

  • Curry leaves

  • Frozen green beans

  • White Potatoes

  • Coconut milk

  • Tomato sauce (pre-cooked is best)

  • Paprika

  • Onion Powder

  • Garlic powder

  • Turmeric

  • Dried Parsley

  • Dried Oregano

  • Sea Salt (optional)

  • Extra Virgin olive oil




Directions


  1. Chop up yoInur onions, carrots and celery.

  2. Peel your potatoes and dice them.

  3. Place your pot on the stove and turn onto medium heat.

  4. Drizzle olive oil and let your onions, celery, and carrots saute for 2-3 minutes

  5. Place your potatoes and yellow split peas inside pot. (if from a can you just place your peas in, if they're dried, you soak them over night, bowl for an hour before hand to prepare).

  6. Pour your coconut milk, tomato sauce, and water over your vegetables.

  7. Season your soup with your herbs and spices to taste.

  8. Bring soup to boil, then reduce heat to low and let simmer for 30 minutes.

  9. Place your frozen green beans at the end.

  10. Turn off heat.

  11. Wait 10 minutes for your soup to cool down.
